At the foot of Mount Bonifato, with a north/north-west exposure, we have a small vineyard of Catarratto extra lucido. Its position is privileged because it stands above an extensive travertine bank of extraordinary importance for the geological reconstruction of this part of Sicily. In fact, it preserves millennia of history, evidenced by very important fossil remains.
Such a rich soil gives back to the grapes a highly complex mineral profile that seemed particularly ideal to us for a sparkling wine base.

Winemaking
The grapes are harvested in crates and whole-bunch pressed once in the winery. White winemaking and second fermentation according to the traditional method (metodo classico). Minimum aging of thirty months, then disgorging with the same wine, without added sugars.

Organoleptic characteristics
Color: straw yellow. Nose: notes of almond and bread crust. Taste: a very mineral and savory entry that opens up to a complex acidity. Further citric notes recall lemon and other citrus fruits, leading into a finish that confirms the typical characteristics of the grape variety.
