Sicilian Sumac
Sumac is a native plant commonly found in the Mediterranean region. Its seeds are used as a spice, with an intense red colour and citrusy flavour. Historical accounts confirm its ancient use; in both Egypt and Greece, it was also used as a fabric dye. The Romans, instead, used it to prepare a tangy and refreshing drink. However, it was in the Middle Ages that it became more widespread in cooking, particularly in the Middle East.
