Boiled Sicilian Green Lentils
The variety of lentils we grow is somewhat smaller than common green lentils and comes from non-hybrid seeds which we reproduce every year. The preparation is simple: the lentils are soaked for six hours and then gently boiled without adding any salt or additives. Ready to use and versatile, they lend themselves to a variety of preparations: from soups (which can include even the cooking water) to rich side dishes, or to be added as protein in salads.
