From ancient Alexandria in Egypt and thanks to the Phoenicians, Zibibbo arrived in Sicily. Today we consider it an indigenous grape variety because it has found its ideal development in our territory. Although tradition wants it crafted for the production of sweet wines, we wanted to reinterpret Zibibbo into a dry aromatic wine, in this pleasant and carefree version, with the accent on the ‘o’.

Winemaking
Destemming of the grapes. Crushing is excluded.
Rest in press for 12 hours at 8°C.
Static pressing.
The resulting whole must is transferred into steel tanks and the pied de cuve, obtained by spontaneous fermentation of a portion of must prepared 36 hours earlier, is immediately added.
Start of fermentation with temperature control at 15/16°C.
Aging on its lees
4/6 months in steel with battonage.
Organoleptic characteristics
Color: straw yellow with greenish reflections. Nose: intense and balanced with typical moscato notes of the grape variety and scents of citrus and flowers. Taste: harmonious, sapid, and persistent.
