“It was Vincenzo Solano, my grandfather, who planted a bush-trained Catarratto Extra Lucido vine in the Parrino estate in the 1950s. Since then, with my family, we continue the tradition and cultivate this grape variety on the highest part of the hill, where the soil is strong and the vineyard does well even with little water. Next to the vineyard, we then planted a small wood with 500 trees, so as to make the surrounding agro-ecosystem more stable and balanced.”

Destemming of the grapes. Crushing is excluded.
Rest in press for 12 hours at 8°C.

The resulting whole must is transferred into steel tanks and the pied de cuve, obtained by spontaneous fermentation of a portion of must prepared 36 hours earlier, is immediately added.
Fermentation in concrete with temperature control at 15/16°C.
Aging on its lees
6/8 months in concrete with battonage.
Organoleptic characteristics
Color: straw yellow with greenish reflections. Nose: its aroma recalls the scent released when crossing the Mediterranean scrub in spring. Taste: it has a good structure and minerality. It maintains good acidity, with an aftertaste reminiscent of almond.
