Grillo is a typical variety of western Sicily, especially from the province of Trapani. It is a recent grape variety as its origin is attributed in 1869 to the famous Sicilian scientist Antonio Mendola, after selecting several crosses between Catarratto and Zibibbo.

Winemaking
Static pressing of whole grapes. The resulting whole must is transferred into steel tanks and the pied de cuve, obtained by spontaneous fermentation of a portion of must prepared 36 hours earlier, is immediately added. Start of fermentation with temperature control at 15/16°C
Aging on its lees
4/6 months in steel with battonage
Organoleptic characteristics
Color: straw yellow with golden reflections. Nose: subtle and delicate aromas with hints of grass and a light touch of citrus. Taste: a very generous, elegant, well-balanced wine with persistent sensations.
