Catarratto is our grape. For us, it represents the variety of the oldest tradition. It has always been cultivated in our territory, and in the past, it was very rare to find it outside this area. Munir has the great responsibility of continuing the tradition of our fathers. All our farmers cultivate it, precisely because of the deep bond that has been created over the years.

Winemaking
Crushing of the whole bunch. Static pressing. The resulting whole must is transferred into steel tanks and the pied de cuve, obtained by spontaneous fermentation of a portion of must prepared 36 hours earlier, is immediately added. Start of fermentation with temperature control at 15/16°C.

Aging on its lees
4/6 months in steel with battonage

Organoleptic characteristics
Color: straw yellow with greenish reflections. Nose: fruity with notes of wildflowers and citrus. Taste: a wine with good structure, with a long and persistent finish.
