Jaki comes from the beautiful vineyards of Nero d’Avola and Syrah owned by Gioacchino Accardo. He is a historical partner and one of the founders of the Valdibella project. The name Jakì derives from Jachinu, which is the Sicilian diminutive dialect of Gioacchino.

Wine making
The grapes are harvested by hand and transported to the winery in small baskets; subsequently they are de-stemmed and added with natural fermentation must. The must is prepared in the previous days with the grapes of the same vineyard. Fermentation proceeds for about 9 days at a temperature of 28° C, at the end of which the pomace is separated from the wine and pressed. After the malolactic fermentation, which also occurs spontaneously, the wine ages for the winter and the following spring in stainless steel before bottling.

Organoleptic characteristics
Color: ruby red. Smell: very fruity, it brings together the characteristics of the two varieties used for the blend. Taste: ripe red fruits such as cherry and plum prevail, balanced and well structured.
